Profit from Wild Sugar’s first batch of ice cream goes to Flood Relief Appeal

I am so proud of Australians far and wide.The way we are pulling together during this challenging time truly moves me. You should have seen the way everyone worked together in the cleanup in Brisbane i joined on Sunday. Our team of people who had never met before worked together like a well oiled machine!!!

Now here’s a tasty  challenge! Come and eat my first batch of Wild Sugar ice cream and the profit will go to the Flood Relief Appeal. This is the 2nd half of the batch we had at MasterChef Live… yum yum yum! There’ll be 4 gourmet flavours such as Chocaholics Anonymous and Wattleseed. I’ll keep you posted on what markets and when. A moment of madness

I just attempted the boxing day sales for the first time in my life. There mum and I were… lined up, and ready for action. I really wanted one of those quintessential sale moments where you casually elbow someone in the head to get there first or you grab an item at the same time as another, neither party going to back down – a real sale time tussle over an overpriced piece of plastic. Maybe next year ;)

A tart for a tart

Yes I am up to my armpits in Finger lime tart and chocolate avocado mousse in the kitchen here at the moment. I am trying out the wonderful irish moss today, which seems to create the most wonderful light textures in whole food desserts. It is fact a seaweed and can set a liquid at room temperature, with just one whirl on my trusty Vitamix blender. The other vegetable based product I am testing is guar gum. I have noticed you only need a smidgen of this super powered compound and it really does create a full mouth feel when combined with my cashew cream or avocado cream.

Has anyone used either of these? If so how have you found them? It is indeed exploration central here in the Wild Sugar kitchen. Stay tuned for more kitchen shenanigans x Skye    Photos by Lisa Perkovic
