Even though I live in Sydney and I can’t go to the markets, this is damn brilliant how you’ve created all of this in such a short time! :)

    Hi Skye,

We are glad we found you at last. I think we looked a little early and could not find Wildsugar. We will come and try your treats as we LOVED YOUR COOKING ON MASTERCHEF. The day they eliminated you we realised it was not a cooking competition, it was just another “unreality show”. The best were wiped out, however you will do really well and as the show has given you such great exposure. ALL THE VERY BEST!

    HI Skye!

I have just watched your demonstration at Southbank this morning. Where can I find your recipe on that beautiful
desert you made with raspberry coulis, macademia nuts, chocolate mousse and avocado. Would sure like to try it
home. When is your new cookbook coming out!!

    from Maria

  8. Tami says:

Skye thanks for making my world of dessert consumption so much more decadent and enjoyable. Plus I don’t feel guilty – fantastic!
I have visited your Wild Sugar stand every week at the markets since you started (bar last week), met your dad (he’s lovely) and have tried every dessert you have on offer. Having said that I tend to favour the chocolate avocado mousse- can’t get enough of it. I will be back again this weekend to get my normal supply of goodies as I’m such a big fan and stalker of the chocolate mousse. I had withdrawals all week from missing out last Sunday. I also have some great photos of you (very photogenic) that Pete took a few weeks ago of both of us (he was being silly with the camera if you remember)
Also do you think you would have pursued your dessert making dream if you didn’t feature on Masterchef or was it the nudge that you needed to get you started. I personally think you would have been successful regardless due to your happy disposition, determination and drive…..
    Take Care
    Tami

Hi Tami, i really feel as though MasterChef gace me the opportunity to try on working in the food industry and to see if it fit. as it turned out, i naturally fell into my dessert business. thanks so much for all of the positive feedback MIss stalker of the chocolate avocado mousse!!!! also thank you for being there since our first day at the markets.

  12. Sean (Sweetcaramel) says:

Hi Skye, I was youre No*1 fan on Masterchef! I loved your style of cooking and all of your sweet treats! 2 questions; 1: Will you be coming to Adelaide with your sweeties? and 2: when r u going to be releasing your cookbook? I would buy it and make every single recipe! Btw, I am a bit of a recipe creator: I have made so many wonderful recipes that I think I would love, how can I get them to you? I think you would love them. Also, how did you start making a cookbook? I would like to make a cookboko for a Yr 11 project, but Ive no idea where to start. Missing you on TV! I know! you should make a TV show. Hahaha. Just joking. It would be good though.

  13. Sean (Sweetcaramel) says:

Ooops. Not very good at typing!

  14. Mitchell says:

This might be the weirdest thing I’ve ever done. I’ve never written to any stranger, but had to after watching Masterchef. I live in Vancouver, Canada…and by chance happened upon the show Masterchef Australia. Totally changed my life, well I was already on that path. I just turned 30 this year, had my degree in chemistry from uni…but this year I completed a pastry program at a culinary institute here. I’m now persuing my passion in the same manner. I watched the finale first of Masterchef, then had to watch all of the previous episodes. I knew you, were to be eliminated at some point…but I was actually saying to the screen, “No no no…not Skye!!” Hahaha. I guess the point in this email is…maybe you don’t know the impact you’ve made on people, not just in Australia, but over here on our side too. The pastry world can be intimidating with pretentious chefs, but it’s people like you that we need. You’re wonderful and I wish you the best in your endeavors (also…if you ever need a sous-chef…). Take care!

  15. skye says:

    Hi Sean,

Thanks for your gorgeous post :) I will be coming to Adelaide on Friday 22nd October for the NOVITA charity event at Bird In Hand Vineyards. Here is the page on my site with all of the info: https://wildsugar.com.au/?page_id=17

There is a link if you want to buy a ticket to the event. I know it will be amazing as I went to Adelaide for the last one that MasterChef’s Adele did a few weeks back – AMAZING juiciness, cooking. love and all for a good cause. I will be making a dessert canape.

As for my Wild Sugar desserts being available in Adelaide, I am working on it and will keep you posted here on the site.

Your question about my cook book, this is another goal of mine. I am stashing away my recipes and creating a cook book as I progress with my business. As soon as I have it in the bag I will post it on this site :)

In terms of making a cook book, I would choose a couple of your favourite recipes and then design or have a graphic designer mockup a few pages of what you would like your cook book to look like. Next you would need to approach a publisher or you could self publish. You will write your book, then test recipes, shoot photography, next design pages, then it will be printed and distributed. MOst of all, have fun and enjoy the process yes? x Skye gal

  16. skye says:

    Hi Mitchell,

Your message is just the best. It is brilliant to hear that lil ole MasterChef Australia is inspiring people all over the world. Even more brilliant is that you have moved into your area of passion and are loving it. I am just so happy for you. Hey we are both moving into a totally new area in terms of business, which is really exciting. Keep being a beacon for being kind and warm in an industry which really needs it. WE LOVE SWEETS!!!!!

Remember too that you can create an environment/job for yourself which really supports you and doesn’t drain all of your juiciness. There will be somewhere for you to work where you just love it. Wok on and thanks so much for your heartfelt message x Warm wishes x Skye

ps: i love Canada. I lived in Whistler for two seasons 15 years ago and have remained close friends with one of my snowboarding buddies ever since. You are so lucky to be surrounded by those majestic mountains. Enjoy!

  17. Andrew says:

we want more skye. saw you tonight on tv – you are such a lovely woman.

  18. ola says:

am just watching season two here in the uk and we are still on the beginings of the competition so i cheated a bit and have just seen skye’s elimination episode online ! i had to check out this website.. i hope you bring your desserts here to the uk too.. no matter what each and every contestant is a winner everyone should follow their dream and do what their heart dictates … well done and what a lovely attidute too!! if am ever in Australia am going to check out these desserts lol!

  19. Belinda says:

    Hi skye!
Wow I just watched masterchef here in New Zealand, litterally saw you get eliminated about 2 mins ago. Such a shame you left you deserved to stay but I knew you would do really good in your dessert making and thought I’d check out how wild sugar was going! You are such a great chef so good luck with everything and when I’m in aussie some time I’ll make sure I visit Wild Sugar.
You are really aspiring and think you will do an awesome job in all cooking things you take part in!
    :)

  20. Hannah says:

    Hey Skye!

You have done so well on Master Chef and I sure do look up to you!
I would love to visit your cafe Wild Sugar some time!

Hannah ( age 11 from New Zealand! )

  21. Sean says:

Hey Skye, when you were on Masterchef, how much time did you actually have between the judges saying “Your core ingredient is …….” to actually going into the pantry?
Also, were you allowed to take cookbooks into the kitchen or was it just out of your head? If you don’t get allowed to take cookbooks into the pantry, I think you are amazing to be able to think up all of those recipes on the spot. WOW!

  22. skye says:

    Hi Sean,

You get approximately 10 minutes before going into the pantry… you are not allowed to look at cook books at all… all recipes have to be memorised or created in the moment.. so it is certainly a challenge, but one that I really enjoyed. i loved being forced to use ingredients i wouldn’t normally cook with. as you know, stepping outside of your comfort zone in any area of life is a wonderful way to learn, play, make mistakes that lead to great lessons and to create interesting outcomes. i think we all just need to learn to be more forgiving of ourselves when we make “mistakes”… me included! have fun! x

  23. Tapio says:

    Hi Skye,

A bit weird for me to be writing this message, but for some reason I just felt like it. I’m from Finland, but through some nefarious means, I’ve been watching Season 2 of MasterChef (just finished your last episode). I’ve really enjoyed watching you create some amazing and beautiful dishes – though they paled in comparison to your beauty of course (yes, I have a crush on you). :)

I know who ended up winning, so I knew you didn’t make it to the end, but it was still disappointing seeing you get eliminated – I’m definitely going to miss your smile. After seeing, in the end credits of the episode, that you had started a business I thought I’d look you up and thank you for making the first half of the series so enjoyable.

I wish you all the best with your new career and may you always have a reason to smile!

  24. Sarah says:

    Hi Skye,

I have just watched your elimination from Masterchef Oz here in the UK.

I was shocked and disappointed. You have such an amazing talent and beautiful way with food.

I am so pleased you have followed your dream and wish you continued success in the future.

Also,I hope to see your amazing desserts in the UK soon.

    x

  25. Victoria says:

  26. Mervyn says:

    Hi Skye,

I’ve just watched the episode here in the UK where you got eliminated.I was certain Johnathan & Arron would be the ones picked for the final challenge & I was very surprised & shocked when you were put forward.

As a Brummie,Curry is my national dish &,although I have never eaten a Korma, your’s did look a lot better than Arron’s (I mean his spoon stood up in the curry!) &,unless you know what goes into a particular curry,it’s a guessing game.for instance,I use a onion & garlic paste as a base of my curries ala Kieth Floyd.

    You was robbed girl!!

Anyway,I hope that you succeed in your ventures & life is good to you.Sending good karma to you for the future.

    Merv

  27. skye says:

Hi Tapio, Sarah, Victoria and Mervyn, it’s so incredibly fantastic and well… surreal that you guys are watching all of our funny ole noggins over there in Europe. It really is a great series isn’t it? (as was the last!!!). I think the producers of MC have done a brilliant job concepting really interesting ideas for challenges etc etc. Outside of being woken up at 4.30am many mornings :) , it has been such a pleasure being involved with MasterChef. I am truly grateful and humbled by just how much I still have to learn… we are after all just home cooks giving it a go.

Wild Sugar is going really well over here. I have been doing the markets here as a test centre for a few months and am now super happy with my range. what a brilliant place to get feedback and meet like minded foodies, health freaks, sweet seekers and yummy people alike. I am now in the midst of sorting out my manufacturing and retailers etc. It’s challenging but it feels absolutely perfect for me. I just LOVE it!!!!!

Do you guys cook? I would just love to hear what you get up to over there? What makes you sing? Many thanks for getting in contact! Tally ho!!!!!!!!!!!!!!!! x Skye gal

  28. Mervyn says:

    Hi Skye,

Yes I do cook from scratch when I can.I made a chicken & mushroom risotto for Sue & I yesterday, she’s a vegetarian so I added the chicken fillets to mine & prawns to hers. She has to eat fish tho, something to do with lack of vitamins with an all veg diet.
The day before I made 4 mahoosive cornish pasties from scratch for my lunch at work.A lot better for you & cheaper than buying ready made.In fact I rarely,if ever, eat take out like McDonalds, pizza ect as I can make better at home.Burgers useing mince from my butchers with cheese or black pudding in the center, black pepper fried chicken are a couple of my ‘specialty’.
I love making curry’s & other spicy food as well as traditional dishes like Irish Stew & soda bread & am a great fan of German & Dutch food having been based over there many moons ago.:-)
My biggest booboo was I made a curry for myself & a mate, who’s wife was in hospital having a baby,it was soooo hot neither of us could eat it!I’d added a tablespoonful instead of a teaspoonful of dried chili flakes!
But anyway,I found this recipy on a cook site I use & tried it.It’s unusual in it’s concept as you’d not thing the combination would work but it does! Perfect for the colder weather & halloween..In fact,it has Skye written all over it! lol

    Take care,

just wanted to say congratulations skye, i have been watching masterchef australia in the uk and was behind you all the way. Well done on all you have achieved!

  31. jackie says:

Hi Skye, Have been watching masterchef australia here in the uk and recording on Sky HD as little time to watch on normal Tv!! You are fantastic as a chef and my husband was gutted that you had been eliminated! Like a previous post, the best ones go and you are truly one of the best!! I am a head chef in a golf club and would love to get into desserts and concentrate on that but it is finding a niche in the market and having the courage to take yourself out of your comfort zone and step forward!
So I guess this is just to say, well done and when are we going to see you in the Uk promoting “wild sugar”????
    Well done
    Jackie
    xx

  32. skye says:

    Hey Mervyn,

Holy crappers!!!!! The Chocolate chip cookie and Rolo dumplings recipe is sooooo good! i haven’t made it yet, but it really does sound delicious. the chewy aspect of the dumpling casing is something that i go wild over. I’m thinking of making it with the rolos chocolate first, and then once mastered I want to try experimenting with different fillings…. maybe mango, lime and coconut with a coconut cream and toasted coconut on top? what a cool recipe!!!!! Thanks so much for sending it through, i really appreciate it.

I tell you what, I could handle one of those home made cornish pasties right now too. so lovely to hear about your kitchen adventures. please keep posting any recipes you want to share with me or anyone else here. in fact maybe i will start a new topic on this on my blog page where everyone can share their favourite recipes. love your work Merv!!!!!!!!!!!!!!!!!! x Skye

  33. skye says:

Aloha Debbie and Springroll (love the name :) , caaaaaaaaaaw thanks so much for jumping onto Wild Sugar and saying hi. Isn’t the MasterChef series just so much fun to watch? All of the contestants are doing so well over here now… everyone is working really hard and nothing comes without much passiona and dedication, but the show has given us all an amazing opportunity which we’re all grateful for. Hey would you be interested in contributing a favourite recipe to the new recipe share topic on my blog page? x Skye

Helloooooo Jackie :) When i read your message last night I was absolutely knocked off my seat. It is such a huge compliment when a chef says they like what an amateur like me is doing. I read your message out to my partner and he was equally happy to hear it.
In terms of your passion for desserts, if it makes you feel good when you do it, i would just go for it! There are so many different ways to go about it. I decided that i wanted my own business and started small at the markets… one step at a time for me. Now i am getting ready to go into retail outlets. I hope you follow what makes you feel truly alive. Thanks so very much for you encouragement and positive feedback. x wok on! Skye

  36. Diana says:

I just watched you get eliminated on Master Chef in India and I was really upset and came straight on to read about Wild Sugar. Glad to see that you are doing so well and living your dream. Actually, it isn’t just your cooking that grew on everyone but your lovely name, your quiet yet sunny personality and …yes, yes of course I confess your sinful desserts.:)
Wishing you all the very, very best for the future……..

  37. Mervyn says:

    Hi Skye,

Just watching your come back round on TV…I’m rooting for Courtney & Your good self as I believe you have the edge over the others….

  38. Mike says:

    Hey Skye,

Wanted to jump on the bandwagon from the UK and add my surprise at your leaving Masterchef! But great you’re doing well. Sometimes I watch and reckon that the show is “engineered” to throw people that either are not right for the competition (it was about time when Joanne went!), or people that are destined to do better, like yourself and Fiona. Anyway, as George said, beautiful dish from a beautiful girl! :)

Here’s my recipe for brownies that I put up on a website I did for a friend who wanted to open her own bakery. Unfortunately for her she has not had the success she wanted, but she now works in a whole food place and seems very happy. Take care. http://www.bluebird-bakery.co.uk/recipes/?p=recipe&recipe=1

  39. Akshata says:

    Hi Skye,

I am from India and I religiously follow MasterChef Australia. Your desserts were truly artistic, a treat to the eyes. Seriously regret that I can’t get a bite of any of them.

I am sure you’ll go far and someday, who knows, your dessert chain may set up stalls here in India as well!

    Good luck!!!

  40. skye says:

Woot woot! Shouts out to Mithun, Sulo, Diana and Akshata!!!! It sounds like you have have a true passion for cooking and MasterChef. What a brilliant series it has been. I am working super hard here to get Wild Sugar ready for stores. In two weeks we are doing MasterChef live in Sydney, where Wild Sugar will migrate down to Sydney to set up shop. This is a massive undertaking but I am determined. I wish I could meet some of you there.

I hope to make it overseas one day. There is much to be learnt here first though. I am after all just a home cook spreading my wings. Thank you for all of the beautiful support… it means a lot to me.

Let me know how you are going with your own creative or cooking adventures. I would love to hear all about it, as I’m sure others on here would too. Keep cooking with love x Skye

Hello Dianna, you are very kind. If we meet in person though you might be surprised at how loud I am at times – especially around Alvin! I’m sure that you and I would have a brilliant time salivating over devastatingly divine desserts and having a giggle. Thank you for posting your beautiful comment. Warm wishes x Skye

Hi Mervern, good lord… damn the hollondaise!!!! he he he… hope you’re having a great week darling. Thanks for the recipe the other week. Any new culinary adventures? x Skyeborg

Aloha Mike I had a look at your friend’s brownie recipe…. damn!!!! it looks AMAZING!!!!! i think i might just have to go out today and buy the ingredients to make it. It looks truly gorgeous. I hope your friend is finding ways to satiate her passion for cooking in other ways. Perhaps she cld sell her treats at the markets? i found it worked really well. A great community, low overheads and if you find the right market, people are really open to unique ideas around food.. in fact they crave it as we do! Thanks so very much for posting the beautiful recipe. Smiles for miles x Skye

  48. Bea says:

    Hey Skye,

Just read about your new venture – ice-cream!! A subject very close to my heart I can tell you. When I was reading about your ice-cream in your “About” column, I noticed that you said that your ice-creams are made with fresh cream, then it says that you prefer to use cashews and avos instead of cream etc………. just wondering if any of your ice creams are avo based, as I have seen recipes for this before?? nO matter what, as long as you’re using whole foods, it’ll sure be a success.

    Take care, B

  49. skye says:

Sorry i haven’t replied in so long! I’ve been busy getting the Wlid Sugar ice ream range sorted.

Hi Mervyn and MK, keep up the great work with the experimentation in the kitchen. I just love to hear about your adventures! Merv… what is your blog url? :)

Raida and Gilda, caaaw i’m blushing! i would love to see or hear about some of your creations. MC live was a blast…. can’t wait for this year! x

Hey Buy… heers for the feedbak on the design of the site/blog. I’ll be updating it very soon… stay tuned! Do you do design? :)

Hi Christine, I am aboslutely hanging to get to India one day… and you never know i may well bring Wild Sugar with me one day! So lovely to hear that you enjoyed masterhef and the cooking… so did i!!!!! Warm wishes and thank you! x

Hi Erik and Jiska, as i said in the email… cheers!!!! We could get up to some serious mischief in your country! Lovely to hear from you both! x

Hi Bea, thanks so much for your post. I reread my copy on the about page and have made it even clearer now about the difference between my two ranges. The first one is about to launch and that is the dairy ice cream range.., super deluxe and rich. The whole food desserts are completely different… avos and cashews etc. Here, see if this makes it clearer.. let me know what you think: http://wildsugar.com.au/about/ Thanks again :) Wok on! x Skye
